Potato Pudding Vegetable Dish

5 lbs red potatoes
3/4 cup very hot oil
1 onion
10 eggs
salt /pepper
 
peel and grate all potatoes, drain liquid
add very hot oil and fold in
grate in 1/2 onion and let cool
when cool add all eggs and fold in
add salt and pepper to taste
put all into very lightly oiled baking pan

bake at 475 until browned and done

Note: This is not a dessert dish...don't let the word pudding fool you ..:))
