Herbed Chicken

1  6 oz pkg long grain & wild rice mix
3  whole chicken breasts, split, skinned & boned
4  tablespoons margarine
1  can cream of chicken soup
3/4 cup sauterne
1/2 cup chopped celery
1  3 oz can sliced mushrooms, drained
2  tablespoons chopped pimentos (optional)

Cook rice as package directs (omit butter).  Brown chicken slowly in margarine.

For sauce: Add soup to drippings in skillet, slowly add sauterne, stirring until smooth/add remaining ingredients and heat to boiling.

Spoon cooked rice into 1 1/2 quart casserole and arrange chicken on the top.  Pour sauce over the chicken and cover. (Foil is fine)

Bake at 350 degrees for 30 minutes.  Uncover and cook for 15 minutes more.
