IAN'S BEEF CASSEROLE

(as taught to him by his mother)

2 lb Ground Beef
1 Egg
4 Soda Crackers, crumbled
Salt & Pepper to taste
Minced Onion, to taste
1 large can Diced Tomatoes, drained, reserving liquid

In large iron frying pan, mix together, the egg, soda crackers, salt & pepper, minced onion and drained
tomatoes.

Add ground beef.

Combine all, using hands, and pat  into a mound in the center of the pan.

Pour  the reserved tomato liquid over the top.

Bake, uncovered, in 375-F oven for about 1-1/4 hours.

Note: Ian likes to have baked potatoes with this dish.  He places the potatoes in the oven, in advance, so that the
potatoes will have time to bake.
