1 lb. lean ground beef
1 Tbsp. + 1 tsp olive or vegetable oil
1 cup chopped onion
1 cup chopped
bell pepper
2 cloves garlic,
crushed
1 -14.5 oz can diced
tomatoes (with or without green chiles)
1
-15.5 oz can red kidney beans (drained and RINSED)
1- 2.5 oz can sliced mushrooms (drained) or 1 cup sliced
fresh mushrooms
1- 11 oz can whole kernel
corn
1/4 tsp. each: red pepper,
cumin ( I use extra red pepper, like the spice)
1/4 cup non-fat sour cream
Microwave the ground beef 8 minutes on high. While that is cooking, do the following:
In large non-stick skillet heat oil, add onion, bell
pepper and garlic. Cook, stirring occasionally, 5 mins., until veggies are
just tender. Add tomatoes, beans, corn, mushrooms, and spices, stir to
combine. Then add the chili packet and a little water. Add the drained, rinsed
ground beef to the pan and
simmer,
covered for about 20 min.
I rarely use cans in my cooking, but for this recipe it
works great. You can also add additional tomatoes. You can top with a
little sour cream if desired. This recipe is delicious and very low in
fat. It feeds two of us, twice!!
